GRILLED CHEDDAR, TOMATO AND BACON SANDWICHES

Ingredients Weight Measure
Country-style sourdough bread 8 slices
Extra-sharp cheddar cheese, grated, divided (about 8 oz.) 2 cups
Tomato slices, seeds removed, slices drained on paper towels 8 ea.
Turkey bacon slices, cooked 8 ea.
TABASCO® brand Green Jalapeño Pepper Sauce 1 Tbsp.
Mayonnaise 2 Tbsp.

Method

  1. Place 4 bread slices on work surface.
  2. Press 1/4 cup grated cheese onto each slice.
  3. Top each with 2 tomato slices.
  4. Place 2 bacon slices atop each.
  5. Press 1/4 cup grated cheese over bacon on each.
  6. Top sandwiches with remaining bread slices.
  7. Heat heavy, large nonstick skillet over medium heat.
  8. Combine TABASCO® Green Jalapeño Pepper Sauce with mayonnaise.
  9. Spread top of each sandwich with 1/2 Tbsp. mayonnaise mixture, and heat, mayonnaise-side down, in a nonstick skillet until golden brown.
  10. Coat uncooked side of bread slice with 1/2 Tbsp. of mayonnaise mixture.
  11. Turn sandwiches over, mayonnaise-side down.
  12. Top with plates and cook until golden brown on bottom, about 2 minutes.
  13. Transfer sandwiches to work surface.
  14. Cut sandwiches crosswise in half and serve.

Yield: 4 sandwiches
