Ingredients Weight Measure
Cornmeal 2 cups
Flour 1 cup
Canned petite diced tomatoes, juice reserved 14.5-oz. 1 can
Medium Vidalia onion, finely chopped 1 ea.
New potatoes, diced 2 cups
TABASCO® brand Original Red Sauce 1-1/2 tsp.
Salt 1 tsp.
Pepper 1 tsp.
Sugar 1 tsp.


  1. Mix all ingredients in a mixing bowl until well incorporated.
  2. Add enough water or juice from tomatoes to make the mixture form into a thick batter.
  3. Using tablespoon, scoop out "hush puppy"–size portions.
  4. Drop into deep fryer set at about 300°F. Cook until golden brown.

Yield: 30 servings
