CORN ON THE COB WITH CHILI LIME BUTTER AND BASIL

Ingredients Weight Measure
Butter:
Unsalted butter, room temperature 1 1/2 lbs.
TABASCO® brand Green JalapeƱo Pepper Sauce 3/4 cup
Lime juice 3/4 cup
Kosher salt 6 Tbsp.
Ground black pepper 3 Tbsp.
Corn:
Fresh corn ears 12 each
Water 2 gal.
Kosher salt 1/2 cup
Wooden skewers 24 each
Basil, chopped 1 bunch

Method

  1. In food processor combine butter ingredients and mix thoroughly. Remove to container and chill until ready to use.
  2. To serve: Bring chili lime butter to room temperature before serving. Shuck corn and break each ear into two pieces. Cook corn in boiling salted water until tender. Remove corn from water and insert a skewer into the end of each piece. Roll corn in butter mixture and sprinkle with basil. Serve immediately. Enjoy.
