Ingredients Weight Measure
Queso seguro 2-1/2 lbs.
Shrimp, cooked 70-90 ea.
Roasted red peppers, brunoise 1 cup
Mayonnaise 3 cups
Shrimp base 1 oz.
TABASCO® brand Chipotle Pepper Sauce 1 oz.
Worcestershire sauce 1/2 oz.
Chow chow 1/2 cup


  1. Grate cheese in the Robot Coupe®.
  2. Puree shrimp in the Robot Coupe®.
  3. Mix all remaining ingredients in a mixing bowl, thoroughly.
  4. Fold in shrimp and cheese.
  5. Place in a container, label, date & rotate.
  6. To serve: Place brulée dish with 4 oz. Shrimp Pimiento Cheese in microwave for 45 seconds.
  7. Place under broiler until it has browned nicely on top.
  8. Place in pasta plate with napkin base.
  9. Arrange 5 crostini and 3 oz. crab claws around cheese dish.
