PARIS IN JULY CHICKEN WINGS

Ingredients Weight Measure
Vegetable oil 2 Tbsp.
Chicken wings, wing tips cut off and discarded and the wings halved at the joint 20 ea.
Butter 1 oz. (1/4 stick)
Finely chopped shallots 1/4 cup
Red wine 1/2 cup
TABASCO® brand Garlic Pepper Sauce 1/4 cup
Fresh thyme 1 sprig
Demi-glace 1 cup

Method

  1. In bowl, rub oil onto wings.
  2. Broil 4 to 5 inches from heat, turning over once, until barely cooked through, 20 to 25 minutes.
  3. Melt butter in a saucepan and sauté shallots for approximately 2 minutes (until transparent).
  4. Add red wine and TABASCO® Garlic Pepper Sauce and reduce for approximately 2-3 minutes.
  5. Add thyme and reduce further.
  6. Add demi-glace and simmer for approximately 5-6 minutes until sauce begins to thicken.
  7. Toss sauce with chicken wings and serve.

Yield: 20 wings
