SENEGALESE PEANUT CHICKEN WINGS

Ingredients Weight Measure
Chicken wings, wing tips cut off and discarded and the wings halved at the joint 20 ea.
Vegetable oil 2 Tbsp.
Peanut butter 1/3 cup
Coconut milk 2/3 cup
TABASCO® brand Garlic Pepper Sauce 1/4 cup
Peanuts, chopped, for garnish as needed

Method

  1. In a bowl rub oil onto wings.
  2. Broil 4 to 5 inches from heat, turning over once, until barely cooked through, 20 to 25 minutes.
  3. Combine remaining ingredients. Pour mixture over wings and toss to coat well.
  4. Let stand 5 minutes; then toss again.
  5. Garnish with chopped peanuts.

Yield: 20 wings
