MADRAS CHICKEN WINGS

Ingredients Weight Measure
Cumin 3/4 tsp.
Coriander 3/4 tsp.
Whole-milk yogurt 2 cups
Garlic cloves, chopped 4 ea.
Ground turmeric 3/4 tsp.
Garam masala (Indian spice mixture) 1/2 tsp.
TABASCO® brand Garlic Pepper Sauce 1/4 cup
Chicken wings, tips cut off and discarded and the wings halved at the joint 20 ea.
Cilantro, chopped, for garnish as needed

Method

  1. In a bowl, mix first seven ingredients together to make marinade and add wings.
  2. Marinate overnight in refrigerator.
  3. Broil 4 to 5 inches from heat, turning over once, until barely cooked through, 20 to 25 minutes.
  4. Garnish with chopped cilantro.
  5. Serve with prepared chutney.

Yield: 20 wings
