CHICKEN WINGS AU POIVRE

Ingredients Weight Measure
Vegetable oil 2 Tbsp.
Chicken wings, wing tips cut off and discarded and wings halved at joint 20 ea.
Butter 1 oz. 1/4 stick
Shallots, finely chopped 1/4 cup
TABASCO® brand Original Red Sauce 2 Tbsp.
Red wine 1/2 cup
Demi-glace 8 fl. oz.
Parsley, finely chopped 2 Tbsp.

Method

  1. In a bowl, rub oil onto wings.
  2. Broil 4 to 5 inches from heat, turning over once, until barely cooked through, 20 to 25 minutes.
  3. Melt butter in a saucepan and sauté shallots for approx. 2 minutes (until transparent).
  4. Add TABASCO® Sauce and red wine. Reduce to an essence (approx. 2-3 minutes).
  5. Add the demi-glace and stir with a whisk until glace is dissolved.
  6. Add water and simmer until the sauce is thick enough to coat a spoon.
  7. Blend in chopped parsley and toss chicken wings into sauce.

Yield: 20 wings
