PUDONG PORK TENDERLOIN

Marinade

Ingredients Weight Measure
Fresh lime juice 1/4 cup
Oyster sauce 3 Tbsp.
Soy sauce 3 Tbsp.
Five-spice powder 2 tsp.
Garlic cloves, minced 3 ea.

Pork

Ingredients Weight Measure
Pork tenderloin, trimmed of any excess fat 1-1/2 lbs.
Shiitake mushrooms, stems discarded and caps sliced thin 1/2 lb.
Scallions, sliced 1 bunch
Water 1/3 cup
TABASCO® brand SWEET & Spicy Pepper Sauce 1/4 cup

Method

  1. To make Marinade, in a large bowl, stir together all marinade ingredients and let stand 15 minutes.
  2. To make Pork, add pork to marinade, tossing to coat completely. Marinate pork, covered and chilled, at least 2 hours, or overnight, turning pork at least once.
  3. Preheat oven to 350°F.
  4. Remove pork from marinade and place in a stovetop-safe pan and roast in the oven until internal temperature reaches 145°F.
  5. Remove cooked pork from pan and place empty pan on stovetop; do not scrape pan; keep the brown bits.
  6. Carefully sauté mushrooms and scallions in pan.
  7. Add water and TABASCO® SWEET & Spicy Pepper Sauce and reduce slightly.
  8. Serve over sliced pork loin.
