Ingredients Weight Measure
Bamboo skewers, 8" 6 ea.
Garlic clove, small, chopped 1 ea.
Seasoned rice vinegar 2 Tbsp.
Asian fish sauce 2 Tbsp.
Water 1-1/2 Tbsp.
TABASCO® brand SWEET & Spicy Pepper Sauce 1/4 cup
Fresh lime juice 1 Tbsp.
Sea scallops, medium 1-1/2 lbs. 24 ea.
Olive oil 1 Tbsp.


  1. Soak skewers in water 30 minutes.
  2. In a Robot Coupe®, puree garlic, vinegar, fish sauce, water, TABASCO® SWEET & Spicy Pepper Sauce and lime juice. (Alternatively, puree sauce ingredients together in a blender.)
  3. Pat scallops dry. Thread 4 on each skewer.
  4. Brush a 12" nonstick skillet with oil and heat over high heat until hot but not smoking.
  5. Sear scallops, turning over once, until just cooked through, about 6 minutes total.
  6. Serve scallops with sauce.
