SESAME SOBA NOODLE AND VEGETABLE SALAD

Ingredients Weight Measure
Soba noodles 12 oz.
Sesame oil 1 Tbsp.
Seasoned rice vinegar 6 Tbsp.
TABASCO® brand Garlic Pepper Sauce 3 Tbsp.
English hothouse cucumber, seeded, shredded 3 Tbsp.
Carrots, peeled, shredded 8 oz.
Radishes, trimmed, sliced 6 large
Green onions, thinly sliced 3 ea.
Salt and pepper to taste
Sesame seeds 2 Tbsp.

Method

  1. Cook noodles in pot of boiling salted water until just tender but still firm to bite, about 8 minutes. Drain.
  2. Rinse noodles under cold water until cool; transfer to large bowl.
  3. Add oil and toss to coat.
  4. Mix vinegar and all remaining ingredients except sesame seeds into noodles.
  5. Sprinkle with sesame seeds and serve.
