Orange juice 1/2 cup
Shallots, small, thinly sliced 2 ea.
Garlic cloves, minced 3 ea.
Fresh cilantro, finely chopped 2 tsp.
Fresh basil, finely chopped 2 tsp.
Asian fish sauce 1 Tbsp.
TABASCO® brand Green Jalapeño Pepper Sauce 2 tsp.
Salt 1/4 tsp.
Vegetable oil 1/2 tsp.
Red snapper fillets with skin, 6 oz. 2 ea.
Scallions 2 ea.


  1. Add shallots, garlic, cilantro, basil, fish sauce, TABASCO® Green Jalapeño Pepper Sauce and salt to orange juice and simmer, stirring occasionally about 2 minutes.
  2. Preheat broiler.
  3. Lightly brush rack of a small broiler pan with oil and on it arrange snapper fillets, skin sides down.
  4. Season fish with salt and broil 4 to 5 inches from heat until just cooked through.
  5. Pour sauce over fish prior to serving.

Yield: 2 fillets
