Skinless boneless chicken breast halves 6 ea.
4x5-inch rectangles focaccia, split horizontally 6 ea.
Yellow tomato, sliced 1 ea.
Red tomato, sliced 1 ea.
Leaves, red leaf lettuce 6 ea.
Low fat mayonnaise 6 Tbsp.
TABASCO® brand SWEET & Spicy Pepper Sauce 2 Tbsp.


  1. Place each chicken breast between sheets of waxed paper.
  2. Using rolling pin or meat mallet, pound each to 1/2-inch thickness.
  3. Cook chicken until firm to touch and cooked through, about 5 minutes per side.
  4. Transfer chicken to platter.
  5. Heat focaccia in oven until just beginning to brown, about 1 minute per side.
  6. Arrange bottom halves of focaccia on work surface.
  7. Combine mayonnaise and TABASCO® brand SWEET & Spicy Pepper Sauce.
  8. Spread each sandwich with mayonnaise mixture.
  9. Top with chicken breast.
  10. Cut sandwiches in half on diagonal.

Yield: 6 sandwiches
