Chicken wings, wing tips cut off and discarded and the wings halved at the joint 20 ea.
Canola oil 2 Tbsp.
Salt 1 tsp.
Apricot preserves 1 cup
Fresh lime juice 1/2 cup
Garlic clove, smashed 1 ea.
TABASCO® brand SWEET & Spicy Pepper Sauce 1/4 cup


  1. Toss wings with oil and salt in a large bowl, then spread in 1 layer on rack of broiler pan.
  2. Broil 4 to 5 inches from heat, turning over once, until barely cooked through, 20 to 25 minutes.
  3. While wings are broiling, blend preserves, lime juice, garlic, and TABASCO® brand SWEET & Spicy Pepper Sauce in a food processor or blender until smooth.
  4. Transfer to a small, heavy saucepan and bring to a boil over moderate heat, stirring, then reduce heat and simmer, stirring occasionally, 2 minutes.
  5. Dip the chicken wings, a few at a time, in the apricot mixture, letting the excess drip off, and arrange them without touching in a greased shallow baking pan.
  6. Bake the chicken wings in the lower third of the preheated oven for 2 minutes.
