CRISPY OYSTERS WITH TABASCO® AND LIME VINAIGRETTE, AND CUCUMBER DILL SLAW

Crispy Oysters

Ingredients Weight Measure
Oysters whole, shucked 24 ea.
Oyster breading - ingredients as follows:
Panko bread crumbs 1 cup
Salt & black pepper 1 tsp.
Butter milk 8 oz.
All purpose flour 2 cups

TABASCO® Vinaigrette

TABASCO® sauce 2 oz.
Shallot, chopped 1 Tbsp.
Canola oil 4 oz.
Lime juice 2 Tbsp.
Salt 1/2 tsp.

Cucumber Dill Slaw

Ingredients Weight Measure
Nappa cabbage, shredded 4 cups
Cucumber, peeled, seeded, sliced 1 ea.
Dill, minced 2 Tbsp.
Sour cream 1/2 cup
Salt 2 tsp.

Method

  1. Crispy Oysters - Dredge oysters in flour, dip in buttermilk, and roll in panko breading. Deep fry until golden brown, about 3 minutes.
  2. TABASCO® Vinaigrette - Place all ingredients in blender EXCEPT oil, blend while slowly adding oil.
  3. Cucumber Dill Slaw - Mix all ingredients together.
  4. On plate assemble the Cucumber Dill slaw in center of plate. Drizzle 2 oz. of TABASCO® lime vinaigrette around the slaw. Place oysters around the Cucumber Dill slaw. Garnish with chopped chive.

Yield: 6 servings
