Ingredients Weight Measure
Italian parsley, chopped fine 2 gal.
Cilantro, chopped fine 3 qts.
Fresh thyme, chopped fine 6 cups
Onion, diced fine 3 cups
Olive oil 2 gal.
Garlic, chopped fine 2 cups
Lemon juice, fresh squeezed 2 cups
Lime juice, fresh squeezed 1 cup
Salt 2 cups
TABASCO® brand Green JalapeƱo Pepper Sauce 4 cups


  1. Place all ingredients in a large mixing bowl and whisk together until all is well blended.
  2. Place in an airtight container and let set at least 8 hours before use, this will allow all the flavors to blend together. Note: You may mix 1 gallon to 2 quarts Kraft® mayonnaise to use as a Chimmi Churri Mayonnaise.

Yield: 2 gallons
