EGGS BENEDICT PIZZA WITH SPICY HOLLANDAISE SAUCE

Prepared pizza dough 12 oz.
Cornmeal 2 Tbsp.
Pizza sauce 3/4 cup
Mozzarella cheese, shredded 1-1/2 cups
Ham, sliced 3/4 cup
Ripe tomatoes, sliced 2 ea.
Whole eggs 5 ea.
Egg yolks 2 ea.
Lemon juice 2 Tbsp.
Tomato paste 2 tsp.
TABASCO® brand Original Red Sauce 1 tsp.
Warm water 1 Tbsp.
Salt pinch
Black pepper pinch
Salted butter, melted 6 oz.

Method

  1. Preheat oven to 425°F.
  2. On a flat work surface, flatten pizza dough into a 14" circle, leaving a 1/2" raised rim around the edge. Place on a wooden pizza peel sprinkled with cornmeal.
  3. Spread pizza sauce over dough and top with an even layer of cheese. Top with ham and sliced tomato.
  4. Bake pizza for 6-8 minutes. Remove pizza from oven and crack whole eggs over pizza, evenly spaced. Return pizza to oven and bake for another 3-4 minutes, until egg yolks are cooked but still runny.
  5. While pizza is baking, make hollandaise sauce. Combine yolks, lemon juice, tomato paste, TABASCO® Sauce, warm water, salt and pepper in a food processor. While running, slowly drizzle melted butter into food processor. Reserve and keep warm.
  6. Remove pizza from oven and drizzle spicy hollandaise sauce over pizza.

Yield: 1 14" pizza, or 2-3 servings
