ITALIAN BRUSCHETTA MELTS

Ingredients Weight Measure
Tomatoes, ripe, diced 4 cups
Red onion, diced 3/4 cup
Basil, chopped 1/4 cup
Garlic, minced 2 tsp.
TABASCO® brand Original Red Sauce 1 tsp.
Balsamic vinegar 3 Tbsp.
Olive oil, divided 1/2 cup
Salt pinch
Black pepper pinch
Focaccia bread, 12" square 1 ea.
Fresh mozzarella, sliced 2 lbs.

Method

  1. Preheat oven to 400°F.
  2. Combine tomatoes, red onions, basil, garlic, TABASCO® Sauce, balsamic vinegar and 2 Tbsp. olive oil. Season with a pinch of salt and pepper. Set aside.
  3. Split bread in half cross-ways (as if to make a sandwich). Brush both halves with remaining olive oil. Place on a baking sheet and toast in oven until lightly browned.
  4. Spread marinated tomato mixture on toasted bread. Top with slices of fresh mozzarella.
  5. Bake in oven for 12-15 minutes, or until fresh mozzarella is fully melted.

Yield: 2 12" square pizzas, or 2-3 servings
