BRAZILIAN PORK STEW

Ingredients Weight Measure
Pork stew meat 3 lbs.
Flour 1/2 cup
Oil 1/2 cup
Celery, chopped 1 cup
Carrots, chopped 1 cup
Onions, chopped 1 cup
Potatoes, chopped 4 cups
Garlic, chopped 2 Tbsp.
Tomato paste 1/2 cup
TABASCO® brand Original Red Sauce 3 Tbsp.
Beef broth 3 qts.
Salt and pepper to taste

Method

  1. Toss meat with flour.
  2. Heat oil in pan, add pork, brown and cook until 2/3 done.
  3. Add vegetables; cook until vegetables are just tender.
  4. Add garlic and cook 2 minutes; add tomato paste, TABASCO® Sauce and broth.
  5. Reduce heat and bring to a simmer. Add salt and pepper. Cook for 1 hour.
  6. Remove from heat; let stand 10 minutes.
  7. Cool, refrigerate and hold for service, or place in warmer until ready for service.
