Ingredients Weight Measure
Orange juice 32 oz.
Lemon juice, fresh 8 oz.
Lime juice, fresh 8 oz.
TABASCO® brand Original Red Sauce 2 Tbsp.
Garlic cloves, coarsely chopped 12 ea.
Achiote seasoning 1/2 Tbsp.
Brown sugar 2 Tbsp.
Salt to taste
Pork tenderloin 4-1/2 lbs.
Citrus fruits, for garnish as desired
Green onions, for garnish as desired


  1. Combine orange, lemon and lime juices, TABASCO® Sauce, achiote seasoning, garlic, brown sugar and salt. Mix well.
  2. Clean any surface fat from tenderloin and marinate in juice mixture overnight. Portion out tenderloin.
  3. Place on hot grill and cook to order.
  4. Garnish with citrus fruits and green onions.
