Ingredients Weight Measure
Idaho® Potatoes, cut into wedges 3 ea.
Olive oil 3 Tbsp.
Salt to taste
Pepper to taste
Butter 2 Tbsp.
TABASCO® brand Original Red Sauce 1-1/2 tsp.
Parmesan, grated 1/2 cup
Scallion, chopped 1/4 cup


  1. Toss potatoes in olive oil to coat completely. Season with salt and pepper. Lay flat on a large cookie sheet pan and place in a 425┬░F oven. Bake for 20-25 minutes, until potatoes are golden brown and tender.
  2. While potatoes are baking, combine butter and TABASCO® Sauce in a small sauce pot and warm over low heat until butter is melted.
  3. Remove potatoes from oven and brush with butter-TABASCO® mixture. Sprinkle generously with Parmesan cheese and scallions.
