CHIPOTLE CHI-TOWN PITA CHICKEN SLIDERS STUFFED WITH BLUE CHEESE CRUMBLES & SMOKIN' BLUE SLAW

Sliders

Ingredients Weight Measure
Ground chicken 2 lbs.
Red onion, small dice 1/2 cup
TABASCO® brand Chipotle Pepper Sauce 1/2 cup
Fresh basil, finely chopped 3 Tbsp.
Fresh thyme, chopped 1 tsp.
Blue cheese crumbles, divided, 1 Tbsp. portions 2/3 cup
Pita bread, halved 6 ea.

Smokin’ Blue Dressing & Slaw

Mayonnaise 1 cup
Sour cream 1/3 cup
Heavy cream 1/2 cup
TABASCO® brand Chipotle Pepper Sauce 1/2 cup
Blue cheese crumbles 1/2 cup
Cabbage, shredded 20 oz.
Lettuce, head, shredded 1 ea.
Tomatoes, chopped 2 Tbsp.

Method

  1. Mix chicken, onion, TABASCO® Chipotle Sauce, basil and thyme.
  2. Form chicken mixture into 24 sliders, 2x4 inches (1.5 oz) each.
  3. Place 1 Tbsp. of blue cheese crumbles into the middle of one slider.
  4. Take another slider and put it on top of a slider with cheese. Gently bind the sides together forming an enclosed slider so the cheese does not escape with cooking.
  5. Cook on griddle on medium-high heat 3-5 minutes first side and 2-4 minutes second side. Alternatively bake at 425°F for 15 minutes on a lightly greased sheet pan.
  6. To prepare Smokin' Blue Dressing, mix the mayo, sour cream, heavy cream and TABASCO® Chipotle Sauce. Fold in blue cheese crumbles.
  7. To prepare Smokin' Blue Slaw, toss together cabbage, lettuce, and 1/2 cup of prepared dressing.
  8. Place 1/3 cup prepared slaw into pita half followed with 1 slider.
  9. Garnish with 1-3 Tbsp. Smokin' Blue Dressing and 2 Tbsp. tomatoes.
  10. Wrap in tin foil sheet and serve.
