Ingredients Weight Measure
Olive oil 2 Tbsp.
Bacon, sliced, minced 1 lbs.
Ground turkey 2 lbs.
Onion, white, large, small dice 2 cups
Garlic, minced 2 Tbsp.
Chili powder 1 tsp.
Ground coriander 1/2 tsp.
Paprika 1/2 tsp.
Cayenne pepper 1/2 tsp.
Dry oregano 1 Tbsp.
Kosher salt 4 Tbsp.
TABASCO® brand Original Red Sauce 3 Tbsp.
Tomato, diced, canned 28 oz.
Tomato puree 28 oz.
Water 14 oz.
Tomato paste 3 oz.
Black beans, canned 15 oz.
Corn, whole kernel, canned 15 oz.
Oil for fryer
Shoestring french fries 28 oz.
Sharp cheddar cheese, shredded 8 oz.
Sour cream 6 oz.


  1. Add olive oil and minced bacon to 8-quart pot over medium-high heat. Cook until bacon is crispy. Remove bacon and separate bacon bits from bacon fat. Reserve bacon and fat.
  2. Return pot to stove over medium-high heat. Add ground turkey. Cook until done and remove from pot placing cooked turkey in a strainer over the sink, discarding the liquid.
  3. Return pot to stove over medium-high heat. Add bacon fat, onion and garlic, and sauté for 3 minutes. Add spices and stir 30 seconds.
  4. Add TABASCO® Sauce, diced tomatos, tomato paste, tomato puree and water. Reduce heat to medium-low and simmer 30 minutes.
  5. Add black beans and corn. Increase the heat to medium and simmer 5 minutes. Remove from heat.
  6. In a counter-top fryer add appropriate amount of vegetable oil and set to 375°F.
  7. Cook shoestring fries according to package directions and remove from oil. Salt lightly.
  8. Spoon chili over the hot fries, sprinkle cheese over hot chili so it melts. Add sour cream to taste.
