CHIPOTLE MEATBALL MINI CALZONES

Spanish onion, minced 2 ea.
Garlic, minced 4 cloves
Basil, minced 1/2 bunch
Olive oil 3 Tbsp.
Ground beef 6 lb.
TABASCO® brand Chipotle Pepper Sauce 2-1/2 cups
Sweet Baby Ray’s® Barbecue Sauce 1-1/3 cup
Pizza dough, 2 oz. portions 12 lb.

Method

  1. In a large rondeau, sauté the onions, garlic and basil in the olive oil until the onions are translucent, about 3-4 minutes.
  2. Add the ground beef, breaking it up into small pieces; cook 3/4 of the way.
  3. Add the TABASCO® Chipotle Sauce and barbecue sauce; cook until beef is completely cooked, about 3-4 minutes. Set aside to cool.
  4. Form pizza dough into 5-in. rounds.
  5. Using an ice cream scoop, place 2 oz. of the ground beef-Chipotle Sauce mixture in the middle of the dough.
  6. Fold the dough over and pinch the seam closed. Cut 2 small slits in the top of the calzone and bake in a pizza oven or convection oven until golden brown.

Yield: 96 servings

Optional: Serve with a sour cream and TABASCO® Chipotle Sauce dipping sauce.
