Ingredients Weight Measure
Prosciutto or deli ham, thinly sliced 24 slices
TABASCO® brand Garlic Pepper Sauce 3 Tbsp.
French or Italian bread, cut into 1-in. pieces 6 cups
Butter 6 Tbsp.
Goat cheese, crumbled 1-1/2 cup
Fresh herbs, chopped (optional) 3/4 cup
Safest Choice™ Pasteurized Eggs 24 ea.
Salt to taste
Black pepper, coarsely ground to taste
Bell pepper, finely minced (optional) 3 Tbsp.


  1. Preheat oven to 400°F. Spray bottom and sides of ramekins with nonstick cooking spray.
  2. Brush or dab each side of the prosciutto or ham lightly with the TABASCO® Garlic Sauce.
  3. Line each ramekin with 2 slices prosciutto or ham, with some extending over sides.
  4. In large bowl, toss bread pieces and butter together. Stir in cheese and herbs. Divide mixture evenly among ramekins, pressing down lightly. If additional spiciness is desired, add some or all of the remaining TABASCO® Garlic Sauce.
  5. Break 2 eggs into each ramekin. Add salt and pepper, as desired. Sprinkle bell pepper around eggs, if desired.
  6. Place ramekins on rimmed baking sheet. Bake in 400°F oven 25 to 30 minutes, until whites are set and yolks begin to firm, or to desired doneness.
  7. Garnish with additional herbs, if desired.

Yield: 12 servings

Note: To reduce sodium, use low-sodium ham.
Variations: Other cheese, such as cubed mozzarella, cheddar, etc. may be substituted for the goat cheese. Herbs such as basil, rosemary, thyme, chives and/or parsley may be used. Use one or a combination.
