CORN FRITTERS

Ingredients Weight Measure
Whole-kernel corn 1-1/2 cups
TABASCO® brand Buffalo Style Hot Sauce 1 cup
Black beans, cooked 1 cup
Hominy 1 cup
All-purpose flour 2/3 cup
Green onion, chopped 1/2 cup
Red bell pepper, small dice 1/2 cup
Eggs 2 ea.
Vegetable oil 4 cups
Salt to taste
Pulled chicken 1 lb.
Pico de gallo 1 cup

Method

  1. Mix all ingredients except vegetable oil, salt, pulled chicken and pico de gallo. Allow mixture to sit for 10 min. Shape into patties.
  2. Heat oil and cook fritters until done; sprinkle with salt.
  3. Garnish with pulled chicken and pico de gallo.

Yield: 4 servings
