Ingredients Weight Measure
Eggs, hard boiled 24 ea.
Dijon mustard 1-1/2 oz.
Salt 1-1/2 tsp.
White pepper 3/4 tsp.
Mayonnaise, extra heavy 6-1/2 oz.
TABASCO® brand Original Red Sauce 2-1/2 Tbsp. (adjust to taste)
Shrimp or crawfish, chopped 2-3 lbs. (as desired)


  1. Cut hard boiled eggs in half lengthwise. Set aside 36 halves.
  2. Remove egg yolks from halves and chop remaining egg whites; add to food processor. Add mustard, salt, pepper, mayonnaise and TABASCO® Sauce and process until combined. Adjust amount of TABASCO® Sauce to taste.
  3. Add chopped seafood and mix.
  4. Fill pastry bag with filling; stuff and garnish eggs as desired.
