Ingredients Weight Measure
Chorizo, small-diced 2 lb.
Cotija cheese, crumbled 1 cup
Roasted corn 1 cup
Black beans, smashed 1 cup
TABASCO® brand Green Jalapeño Pepper Sauce 1/4 cup
Empanada dough 1 qt.


  1. Combine all ingredients except dough; mix well and set aside.
  2. Roll out the dough to 1/4-in. thickness. Using a round 4-in. cutter, cut all of the dough into circles.
  3. Place 1 heaping tablespoon of filling into the middle of each dough circle; wet the edges of the dough with water. Create a beggar’s purse by sealing the top; cut off any remaining dough.
  4. Preheat fryer to 350ºF; fry until golden brown.
