END ZONE DEVILED EGGS

Ingredients Weight Measure
Hard-boiled eggs 24 ea.
TABASCO® brand Original Red Sauce 1/4 cup
Mayonnaise 1 cup
Curry powder 1-1/2 Tbsp.
Dijon mustard 2 Tbsp.
Cornstarch 1 cup
Eggs, raw, separated, whites only 12 ea.
Panko breadcrumbs 1 qt.
Black pepper to taste

Method

  1. Preheat a deep-fryer to 350ºF.
  2. Cut hard-boiled eggs in half lengthwise; separate yolks from whites.
  3. Push hard-boiled egg yolks through a tamis into a bowl.
  4. Add TABASCO® Sauce, mayonnaise, curry powder and Dijon; mix until smooth. Place mixture into a piping bag with a star tip.
  5. Lightly dust hard-boiled egg whites with cornstarch, shaking off any extra; set aside.
  6. Whisk raw egg whites. Bread hard-boiled egg whites by coating them in whisked egg whites and Panko breadcrumbs.
  7. Place breaded egg whites into fryer until golden brown.
  8. Pipe filling into fried whites. Season with black pepper.
