WAFFLE WRAP WITH SMOKED CHICKEN, CRUMBLED BACON & SPICY HONEY

Ingredients Weight Measure
Belgian waffle batter, prepared 4 waffles
Sage, chopped 1/4 cup
Bacon, cooked and crumbled 1 cup
Cheddar cheese, small dice 1-1/2 cups
White barbecue sauce 1/4 cup
Green cabbage, shredded 1 cup
Red cabbage, shredded 1 cup
Smoked chicken, pulled 1 ea.
Kansas City-style barbecue sauce 1/2 cup
TABASCO® brand Chipotle Pepper Sauce 3 oz.
Honey 6 Tbsp.

Method

  1. Heat a traditional waffle iron.
  2. Combine waffle batter with sage, bacon and cheese. Cook waffles; keep warm by covering with plastic wrap so they don’t break when folding.
  3. Combine white barbecue sauce with both shredded cabbages, toss and set aside.
  4. Lightly dress the pulled smoked chicken with the Kansas City-style barbecue sauce; keep warm.
  5. Combine TABASCO® Chipotle Sauce and honey.
  6. Place a nice amount of the macerated cabbage in the middle of each waffle, cover each with 1/4 of the chicken, and drizzle honey over top (or reserve honey to serve separately for dipping). Fold waffles into traditional tacos.
