CUCUMBER COOLER

Ingredients Weight Measure
Cucumber, chopped and seeded 3 pts.
Salt 1 Tbsp.
Chicken broth 3 cups
Half-and-half or light cream 1-1/2 cups
Lemon juice 1 Tbsp.
TABASCO® brand Original Red Sauce 3/4 tsp.
Ice cubes 18 ea.
Cucumber slices, for garnish

Method

  1. Sprinkle chopped cucumber with salt; let stand 15 minutes.
  2. In container of electric blender, combine half each of cucumbers, broth, cream, lemon juice and TABASCO® Sauce. Cover, process until smooth. Reserve.
  3. Repeat process with other half of same ingredients.
  4. To prepare an individual serving, blend 1 cup of the cucumber mixture in container of electric blender with 3 ice cubes; process until smooth.
  5. Pour into tall glass. Garnish with cucumber slice.

Yield: 6 1-1/2 cup servings
