MACHO NACHOS

Ingredients Weight Measure
Olive oil 4 Tbsp.
Ground beef 4 lbs.
Refried beans 2 cans
Black beans 2 cans
TABASCO® brand Chipotle Pepper Sauce 1/2 cup
Corn tortilla chips 3 lbs.
Tomatoes, chopped 1 cup
Cheddar cheese, shredded 8 oz.
Green onion, chopped 1/2 cup
Garlic clove, minced 2 ea.
Green chiles, chopped 1 can

Method

  1. Pre-heat oven to 350°F.
  2. In a large pan, over high heat, add olive oil, garlic and ground beef. When beef is cooked, reduce heat to medium. Add refried beans and heat through.
  3. Stir in black beans, green chiles and TABASCO® Chipotle Pepper Sauce. Remove from heat.
  4. Cover a sheet pan with aluminum foil and lay tortilla chips on top.
  5. Spoon beef, refried bean, black beans and TABASCO® Chipotle Pepper Sauce mixture on top.
  6. Sprinkle with chopped tomatoes and cover with shredded cheese.
  7. Bake until cheese is melted.
  8. Remove from oven and garnish with chopped green onion.

Yield: 10-12 servings
