VEGETABLE POTPOURRI

Ingredients Weight Measure
Prepared cheese sauce 1 gal.
TABASCO® brand Original Red Sauce 1 Tbsp.
Onions, diced and cooked 3 lbs.
Carrots, sliced and cooked 3 lbs.
Green peas, cooked 3 lbs.
Cut green beans, cooked 6 lbs.
Cauliflower, cooked 9 lbs.
Swiss cheese, grated 1 Tbsp.
Buttered breadcrumbs 1 Tbsp.

Method

  1. Combine cheese sauce, TABASCO® Sauce, onions, carrots, peas, green beans and cauliflower.
  2. For each serving, place 8 oz. of vegetable mixture in individual casserole. Sprinkle with Swiss cheese and breadcrumbs.
  3. Bake at 350°F for 10-15 minutes, or until sauce is bubbly and crumbs are lightly browned.

Yield: 50 8-oz. servings
