PORK & PEPPERS

Ingredients Weight Measure
Vegetable oil, divided 1/2 cup
Onion, finely chopped 5 oz. 1 cup
Garlic, mashed 4 cloves
Green peppers, cut in 1" squares 8 oz.
Pork tenderloin, cut in 1" cubes 2-1/2 lbs. 48 cubes
Stock 1 cup
Salt 2 tsp.
TABASCO® brand Original Red Sauce 3/4 tsp.

Method

  1. Sauté onions, garlic, and green peppers in half the oil for 5 minutes.
  2. Drain off oil.
  3. Sauté pork in remaining oil until well browned.
  4. Drain off fat.
  5. Add pepper mixture, stock, salt and Original TABASCO® Pepper Sauce.
  6. Cover and simmer 45 minutes.

Yield: 12 servings
