Ingredients Weight Measure
Ground beef 16 oz. 2 cups
Cumin, ground 2 Tbsp.
Canned chopped tomatoes 10 oz. 1-2/3 cups
TABASCO® brand Original Red Sauce 3 oz. 6 Tbsp.
Eggs, beaten 24 oz. 12 ea.
Monterey Jack cheese, grated 6 oz. 1 cup
Biscuits 12 ea.


  1. Sauté the ground beef until it is cooked through. Add the cumin, tomatoes and TABASCO® Sauce and cook until the liquid is reduced, about 5 minutes. Hold warm for service.
  2. For each serving, ladle 2 oz. egg into a nonstick omelet pan and cook the egg omelet style until it is set.
  3. Ladle 1-1/2 oz. ground beef mixture down the center of the omelet and top with 1/2 oz. cheese. Fold the omelet in half, and then into quarters and place on a biscuit.
