PORTUGUESE FISHERMAN STEW

Ingredients Weight Measure
Striped bass or other fish fillets, fresh or frozen 2 lbs.
Margarine or butter 1 Tbsp.
Onions, chopped 1 cup
Garlic, crushed 1 clove
Canned tomatoes, undrained, cut up 2 lbs. 2 cans
Water 3 cups
Leaf basil 1 tsp.
Leaf thyme 1 tsp.
Red pepper, crushed 1/4 tsp.
Salt 1 tsp.
Pumpkin or winter squash, cut into 1" cubes 4 cups
Corn, cut crosswise into 1" pieces 2 ears
TABASCO® brand Original Red Sauce 1/4 tsp.

Method

  1. Thaw fish if frozen. Cut fish into 1" cubes.
  2. In large saucepan, melt margarine. Add onions and garlic and cook until vegetables are tender. Add tomatoes, water, basil, thyme, red pepper, salt, pumpkin, corn and TABASCO® Sauce. Cover and bring to boil; simmer for 10 to 15 minutes or until pumpkin and corn are done.
  3. Add fish and continue to cook for 5 to 10 minutes or until fish flakes easily when tested with a fork.

Yield: 12 cups
