GREEN PEPPER AVOCADO CILANTRO SALSA

Ingredients Weight Measure
Large avocados, halved and pitted 24 ea.
Tomatillos, husks removed, washed and cut into quarters* 48 ea.
Cilantro, leaves only, loosely packed 3 qts.
Onion, chopped 3 cups
TABASCO® brand Green Jalapeño Pepper Sauce 1/2 cup
Salt 1/4 cup

Method

  1. Scoop avocados into the container of a blender or food processor. Add tomatillos, cilantro, onions, TABASCO® Green Jalapeño Pepper Sauce and salt. Process until smooth.
  2. If not using immediately, cover with plastic wrap directly on top of salsa and refrigerate. Serve with tortilla chips for dipping.

Yield: 1-1/8 gallons

*Mexican green tomatoes - if not available, substitute cherry tomatoes, quartered.
