MEXICAN CHICKEN SALAD

Ingredients Weight Measure
Cooked chicken, cubed 1-1/2 qts.
Sour cream 3/4 cup
Mayonnaise 3/4 cup
Carrot, finely chopped 3/4 cup
Cilantro 3/8 cup
Capers, drained 3/8 cup
Red bell pepper, finely chopped 3/8 cup
Lemon juice 3/8 cup
Ground cumin 3/4 tsp.
Onion, finely chopped 3/4 cup
TABASCO® brand Green JalapeƱo Pepper Sauce 3/4 cup
Salt to taste
Avocados, peeled, cut into wedges 3 ea.
Lettuce leaves as needed
Paprika to taste

Method

  1. Toss together all ingredients except avocados, lettuce and paprika.
  2. Serve on lettuce leaves with avocado wedges. Sprinkle with paprika.
