MANGO SALAD WITH CREAMY ORANGE JALAPEÑO DRESSING

Ingredients Weight Measure
Large ripe mangoes, peeled and diced - 8 each
Jicama*, peeled and diced - 2 cups
Red pepper, chopped - 1 cup
Cilantro, chopped - 1/4 cup
Fresh lime juice - 2 Tbsp.
Lettuce leaves - as needed
Thin slices of red onion, separated into rings - 12 slices
Creamy Orange Jalapeño Dressing - -

Method

  1. In a medium bowl, combine mango, jicama, red pepper, cilantro and lime juice. Toss gently but thoroughly. Cover and chill.
  2. Arrange lettuce leaves on 12 salad plates. Mound 1/2 cup mango mixture in center of each plate. Drizzle 1 1/2 Tbsp. of Creamy Orange Jalapeño Dressing over each salad. Garnish with red onion rings.

Yield: 12 servings

* Also known as Mexican potato - if not available, subsitute with water chestnuts.
