SICILIAN PENNE SALADS

Salad

Ingredients Weight Measure
Penne pasta, cooked al dente 1 lb.
Bell pepper, medium, julienne 1 ea.
White onion, medium, julienne 1 ea.
Fresh broccoli, florets, cut small 1 head
Pepperoni, sliced and julienne 6 oz.
Black olives, sliced 5 oz.
Pepperoncini peppers, sliced 4 oz.

Dressing

Ingredients Weight Measure
Garlic, chopped 2 oz.
Balsamic vinegar 1 cup
Extra virgin olive oil 1 cup
TABASCO® brand Garlic Pepper Sauce 3 oz.
Basil 2 Tbsp.
Oregano 2 Tbsp.
Black pepper, freshly ground 1 tsp.
Parmesan cheese, grated 1 cup

Garnishes

Radicchio as needed
Fresh basil as needed

Method

  1. Assemble all salad ingredients in a large bowl and make the dressing in a separate bowl.
  2. Pour the dressing over the salad, toss and hold refrigerated over night.
  3. Serve in 6-1/2 oz.-portions on radicchio and garnish with fresh basil.
