Romaine lettuce 2-1/4 gals.
Caesar dressing 3 cups
TABASCO® brand Green Jalapeño Pepper Sauce 1-1/2 cups
Parmesan cheese 3/4 cup
Chili croutons* 3 qts.
Jalapeño peppers, sliced and well drained 3 cups
Bacon bits 3/4 cup
Lemon, fresh 1 ea.


  1. In a large stainless mixing bowl, place all ingredients and lightly toss together. Serve on a chilled plate that has been rubbed with fresh lemon.
  2. *When making croutons, add 1 Tbsp. chili powder to mix. If buying croutons, add 1 Tbsp. chili powder to 2 cups croutons and coat well.

Yield: 12 servings

Serving idea: Salad may be topped with grilled chicken, shrimp or beef.
