Chicken pieces approx. 25 lbs. 75 pieces
All-purpose flour 1-1/2 lbs. 3 pts.
Salt 4 tsp.
Buttermilk 2 pts.
TABASCO® brand Original Red Sauce 2 tsp.
Baking soda 2 tsp.
Fat for frying as needed


  1. Wash chicken; pat dry with paper toweling. In large hotel pan, combine flour and salt; toss chicken in flour mixture until well coated.
  2. In large bowl, combine buttermilk, TABASCO® Sauce and baking soda. Dip floured chicken pieces in buttermilk mixture and dust in flour mixture again.
  3. Heat fat in deep-fat fryer to 350°F. Fry chicken about 15 minutes for small pieces and 20 minutes for larger pieces.
  4. Drain on absorbent paper.
