Ingredients Weight Measure
Flour 1-1/2 lbs.
Salt 4 tsp.
Fish pieces (e.g., scallops, shrimp, etc.) 2 lbs.
Buttermilk 2 pts.
TABASCO® brand Original Red Sauce 2 tsp.
Baking soda 2 tsp.
Fat as needed


  1. Combine flour and salt; toss fish in mixture until well coated. Combine buttermilk, TABASCO® Sauce and baking soda; dip floured fish in mixture and dust again in flour mixture.
  2. Heat fat in deep-fat fryer to 350°F. Fry fish, 15 minutes for small pieces, 20 minutes for large; drain on absorbent paper.
