Salt 2-1/3 tsp.
Paprika 2-1/3 tsp.
White pepper 3/4 tsp.
Cayenne pepper 3/4 tsp.
Black pepper 3/8 tsp.
Basil leaves 3/8 tsp.
Dried thyme 3/8 tsp.
Dried oregano 3/8 tsp.
Bacon 1/2 lb.
Tasso ham, minced 12 oz. 3/4 cup
Onion, finely chopped 1 lb., 2 oz. 1-5/8 cup
Celery, finely chopped 12 oz. 3/4 cup
Green pepper, finely chopped 12 oz. 3/4 cup
Seafood base 1 Tbsp.
Garlic, minced 1 5/8 tsp.
Butter, melted 4 oz. 1/2 cup
Minor's® Culinary Cream 1 gal.
Green onion, finely chopped 4 oz. 3/4 cup
TABASCO® brand Green Jalapeño Pepper Sauce 8 oz. 1 cup


  1. Combine seasonings in a bowl and set aside. In large skillet, fry bacon until crisp. Add tasso ham to bacon; fry until crisp. Drain off all grease except for approximately 1 Tbsp. Add onions, celery and green peppers. Sauté over medium heat for approximately 7 minutes. Add seafood base, garlic and seasoning mix; simmer for about 6 minutes.
  2. Meanwhile, mix flour and melted butter. Add mixture to pan and whisk in well. Add cream and reduce to low heat, stirring constantly until thick. Add green onions and mix in well. Remove from heat and chill until needed.
