GRILLED SWORDFISH WITH CREOLE PEPPER-GARLIC MAYONNAISE

Ingredients Weight Measure
Extra virgin olive oil 1 cup
TABASCO® brand Original Red Sauce 6 Tbsp.
Fresh basil, chopped 1 Tbsp.
Sun-dried tomatoes, chopped 1 Tbsp.
Fresh cilantro, chopped 1/2 tsp.
Fresh garlic, minced 2 Tbsp.
Capers, drained and chopped 2 Tbsp.
Balsamic vinegar 2 Tbsp.
Swordfish steaks, 1" thick 6 lbs. 12 ea.
Creole Pepper-Garlic Mayonnaise 3 cups

Method

  1. Mix all ingredients of marinade, first 8 ingredients. Place swordfish in marinade. Cover and refrigerate overnight.
  2. Grill or broil swordfish 12-15 minutes.
  3. Serve each with 1/4 cup Creole Pepper-Garlic Mayonnaise and rice.
