Ingredients Weight Measure
Bacon slices 1 lb. 20 ea.
Onions, cut in 1/4" dice 20 oz. 1 qt.
Frozen black-eyed peas 810-oz. packages
Water 4 qts.
Long-grain rice, uncooked 1 lb., 10 oz. 1 qt.
Salt to taste
TABASCO® brand Original Red Sauce 1 Tbsp.


  1. In large saucepan, cook bacon until lightly browned. Remove, crumble and reserve. Reserve drippings.
  2. Add onions to bacon drippings; cook until tender.
  3. Add peas and water; cover and simmer 15 minutes.
  4. Add rice, salt and TABASCO® Sauce. Simmer, covered, until beans and rice are tender, 10-15 minutes. Add reserved bacon.

Yield: 24 servings
