RED BEANS AND RICE

Ingredients Weight Measure
Dry red kidney beans 3 lbs.
Water as needed
Lean salt pork, diced 1-1/2 lbs.
Garlic cloves, minced 3 ea.
Parsley, chopped 1/2 cup
Salt 1 Tbsp.
TABASCO® brand Original Red Sauce 1-1/2 tsp.
Hot cooked rice

Method

  1. In large pot, cover dry beans generously with water, cover and soak overnight.
  2. Simmer, covered, until tender, about 3 hours, adding additional water if necessary. Drain.
  3. In brazier, fry salt pork until crisp and brown. Remove pork. Pour off about half of fat and add garlic to brazier. Sauté several minutes.
  4. Add drained beans with parsley, salt, TABASCO® Sauce and salt pork. Simmer for 15 minutes and serve over rice.
