Ingredients Weight Measure
Salad oil 1/2 cup
Beef round or chuck, cut into 1" cubes 6 lbs.
Garlic cloves, minced 6 ea.
Chili powder 1/2 cup (up to 6 Tbsp.)
Salt 1-1/3 Tbsp.
Dried oregano leaves, crumbled 1-1/3 Tbsp.
Ground cumin 1-1/3 Tbsp.
TABASCO® brand Green Jalapeño Pepper Sauce 1/4 cup
Water 3 qts.
White cornmeal 2/3 cup


  1. Heat oil in large saucepan or Dutch oven over medium heat. Add beef and brown on all sides. Add garlic, chili powder, salt, oregano, cumin, TABASCO® Green Jalapeño Pepper Sauce and water; mix well. Bring to boil, cover and reduce heat to low. Simmer 1-1/4 hours, stirring occasionally.
  2. Stir in cornmeal and mix well; simmer, uncovered, for an additional 30 minutes or until meat is tender. If desired, serve with chopped onions, rice and beans.
