PEPPER POUND CAKE

Ingredients Weight Measure
Butter or margarine 1 cup
Granulated sugar 1 cup
Light brown sugar, firmly packed 1 cup
Eggs 4 ea.
Cake flour, sifted 3 cups
Baking powder 2 tsp.
Allspice 1/2 tsp.
Salt 1/4 tsp.
Milk 1 cup
Vanilla 3 tsp.
TABASCO® brand Original Red Sauce 1/2 tsp.
Confectioners' sugar optional

Method

  1. Preheat oven to 350°F.
  2. In medium bowl, cream butter, granulated sugar and brown sugar; beat eggs in one at a time, beating well after each addition.
  3. In medium bowl, sift together cake flour, baking powder, allspice and salt. Beat flour into creamed mixture alternately with milk; beat in vanilla and TABASCO® Sauce. Turn into lightly buttered 9" tube pan. Bake 50-60 minutes or until cake tester inserted in center comes out clean.
  4. Cool in pan on wire rack 20-30 minutes; remove from pan and cool completely. Before serving, dust with confectioners' sugar, if desired.

Yield: 8 to 10 servings
