Ingredients Weight Measure
Challah bread, crust removed, medium dice 18 oz. 12 cups
Milk, divided 96 oz. 12 cups
Baker's® Unsweetened Chocolate 12 oz.
Egg yolks 12 each
Salt 3/4 tsp.
Sugar 12 oz. 1-1/2 cups
Vanilla 1/2 oz. 1 Tbsp.
TABASCO® brand Original Red Sauce 1 oz. 2 Tbsp.
Whipped cream as needed


  1. To prepare the bread pudding, soak bread in 48 oz. of milk.
  2. Heat remaining 48 oz. milk and chocolate until melted.
  3. In a separate bowl, combine eggs yolks, salt, sugar, vanilla and TABASCO® Sauce. Temper the egg mixture with the warm chocolate milk, stirring continuously.
  4. Pour the mixture into a greased half hotel pan. Bake in a 300°F oven for 20-25 minutes until firm. Cool.
  5. For each serving, scoop 10 oz. bread pudding on a plate and top with whipped cream.
